yes I am epically lazy, but I made bread! it was delicious and all gone within an hour (thanks to my brother). I couldn’t find our mini loaf tins, so I just used a muffin tin.

I MADE MY OWN BUTTER???! it was all very exciting, but then I was like what the hell am I going to do with this butter?? so I made delicious garlic bread.

I’ve been having the urge to make a lot of homemade bread lately, I’ve been way too busy to do any baking during semester though. so I took advantage of the holidays and made these garlic butter and rosemary rolls! started them at 2:30pm and they were ready for dinner at 6. they only took so long because I had dry active yeast,  I think you can cut an hour and a half out of it easily if you have instant yeast and also if you have a stand mixer (I don’t :c).
either way, they were delicious and I love fresh homemade bread!

I made these for dinner last night, I cut the recipe in half, but it was still too much for once person lol :( these were pretty delicious, I used a mix of vintage (aged cheddar) cheese and Parmesan. I also added a pinch of paprika, because paprika makes everything better in my opinion. they were reasonably easy to make, would have been easier if I had a food processor (I had to do the last bit of mixing by hand and it didn’t look quite as perfectly smooth as it could). anyway here is the recipe.

I made risotto last night just so I could make risotto cakes today.
all I did was heat up the risotto a little bit in the microwave and crumb in breadcrumbs, parmesan and paprika. then just fry until golden brown EASY

GO MAKE THIS BREAD IMMEDIATELY.
I am so proud that I made this because it is the best thing I have tasted in so long omg. this is the recipe, the only things I changed were: I didn’t use onion bits or chilli flakes (didn’t have any) and added 1 tsp smoked paprika, 1/2 tsp regular paprika and 1/4 tsp mustard powder.
I think bread making might be my new thing, it is so satisfying.

PIZZA ROLLS
I used this recipe for the dough (it really is very easy) and this method for the pizza rolls. I used parma ham instead of salami, and put oregano, mixed herbs and paprika into the dough I made as well as on top of the rolls, because… well, I wanted to.

Cheese Scones (from the Edmonds Cookbook)
3 cups flour 6 tsp baking powder 1/4 tsp salt 75g butter 1 - 1 & 1/2 cups milk
Sift flour, baking powder and all into a bowl. Cut butter until it resembles find breadcrumbs. Add milk and mix quickly with a knife to a soft dough. Knead a few times. Lightly dust and oven tray with flour. Press scone dough out onto this. Cut into 12 even sized pieces. Leave a 2 cm space between scones. Brush tops with milk. Bake at 220C for 10 minutes or until golden brownFor Cheese scones add 3/4 cup grated cheese, pinch cayenne peper and pinch mustard powder to flour
